Well, I have finally conceded that I can no longer eat mass produced bread products of any kind, and so I am at the end of my first week of a new eating regime, (not a diet as such, since I am not attempting to lose weight) although I have lost a couple of kilos.
Firstly …… it is a nightmare trying to find alternatives. I can’t choose gluten free products, because they have iodine, just like regular bread. I have taken a couple of leftovers meals to work, and just gone to cereal every day for breakfast. The naan bread I made last weekend, has been used as sandwich bread, taco bread, and last night … pizza base.
I have cooked bread here at home, but found out the hard way that the mix packets also contain iodine, so my only choice is to cook from scratch. I have made naan bread, and that has been divine. I have a tortilla recipe, so that is next. And today I bought a big pack of bread flour, so I have the ingredients I need.
I am noticing a distinct difference. The insomnia is tapering off, I haven’t had a headache for days, and the almost daily bouts of nausea and tummy upsets have disappeared. I also don’t seem to have as much gas. I am also noticing an improvement in my moods, although I am not sure if that is just because I am feeling better, or if its a direct consequence of the removal of iodine.
Overall its been a positive outcome, but I am dreading going on holiday or visiting rellies …… I don’t like being a burden, but I can imagine that it will be irritating.
